Nutella & Cinnamon Sugar Muffins


Happy Monday! This is something you don't see very often from me, it's 10.30am and I managed to write this post, take the photos for it and edit them in just under an hour. You can call me Superwoman. I've sacked off the blog schedule and I'm now just going with the flow, posting whenever I feel like it which is surprisingly becoming pretty regularly. Amazing what happens when you don't have the added pressure of a schedule. Considering my S'mores brownies went down a right treat with everyone (including my tummy), I've been itching to bake again ever since!

Being totally honest with you guys, these might be the best things I've ever made - they are actually incredible! So, what is it I'm baking today? Nutella stuffed cinnamon muffins, topped with cinnamon sugar. I mean, the best way I can describe them is churros in cake form and who doesn't love churros?

I was having a pretty lazy Sunday and got bitten by the baking bug, I started researching recipes for Nutella muffins but came across this hidden treasure, here. The original plan was to just bake for fun but I really wanted to share these with my blog because they're so darn delicious, so here we are.

Ingredients - Makes 12
+ 100g Soft, Unsalted Butter (or Margerine)
+ 100g Caster Sugar
+ 120ml Milk
+ 2 Eggs
+ 1tsp Vanilla Extract
+ 250g Plain Flour
+ 1.5tsp Baking Powder
+ 2tsps Cinnamon
+ Nutella

Method
1. Preheat the oven to 200 C and line your muffin tray/baking tray with cases.
2. Cream the butter and sugar together.
3. Add the milk, vanilla extract and eggs. Whisk until combined.
4. Then add the flour, baking powder and cinnamon and again, whisk until combined.
5. Place a tablespoon of batter into the muffin cases, followed by a teaspoon of Nutella which you should then cover with another layer of batter.
6. Put in the oven to bake for 15 minutes, although I did leave mine in for 20 as I prefer the tops to be golden and crispy.
7. Once the muffins are baked and have been left to cool, melt 2tbsps of butter and prepare your cinnamon sugar (literally just cinnamon and caster sugar mixed together).
8. Dip the top of your muffins into the butter, before swirling around the cinnamon sugar.



Have a go at making them for yourself, they're super yummy and definitely easy to make. You don't have to be Mary Berry to make a good muffin. I'm now going to leave slowly as I've said the word "muffin" far too many times and my head is filled with Mean Girls quotes. You know exactly what scene I'm talking about.
