Apple & Cinnamon Loaf Cake

Uh oh, mini Mary Berry over here is back with another baking post. I regret nothing.

I love cake (I mean I love cake mix more but you know) so here's a little somethin' somethin' me and my mum whipped up yesterday. Apple and cinnamon is literally my favourite flavour combination in the world. Hand me anything that's apple and cinnamon flavoured and I'm going to dive straight into it without a doubt.

This cake is so quick and easy to make! If I can make a successful one for the first time, anyone can.

Ingredients
+ 75g Softened Butter/Margarine
+ 200g Self-Raising Flour
+ 100g Brown Sugar
+ Cinnamon
+ Nutmeg
+ 1 Baking Apple
+ 3 Eggs

Method
1. Preheat your oven to 180 C/160 C for fan assisted ovens and line a loaf baking tin.
2. Peel the baking apple and chop into small chunks.
3. Set the apple aside and place the flour, butter/margarine, brown sugar, eggs and spices into mixing bowl and whisk. Use spices to your taste.
4. Once the cake mix is all whisked together, pour the baking apple into the mix and stir in.
5. Pour into loaf tin ensuring the mix is evenly spread out and all corners are covered.
6. Before the mix goes in the oven, sprinkle brown sugar and cinnamon on top - this will create a crust on top of the cake when baked.
7. Bake for 35-40 minutes, or until the cake is golden brown.

And there my friends, is one of the most delicious cakes you will ever taste. Seriously, it's frickin' amazing.

Have you baked anything recently? I'd love to see!

  10. This looks so delicious!

Sadly the boyfriend hates cinnamon so I fear if I were to make this, I'd have to eat it all myself.

Wait - why did I say "sadly"??? ;-)
