What I Eat In A Day (Slimming World Friendly)
As you may (or may not) know, I've been following the Slimming World plan from home for almost a year, on and off of course - I say this whilst I'm still trying to get rid of my post-Christmas food baby... I'm aware it's May.
Over the last year, my eating habits have improved tremendously as I now have a sort of understanding about balance. Don't get me wrong, I'll still eat the odd KFC or Domino's whenever I feel like it but y'know, that's not what this post is about.
I thought it'd be good to give you a sneaky peek into the sorts of things I eat on a daily basis so I decided to put together a breakfast, lunch and tea (yes I'm from up north, it's tea) that I would eat on the days that I'm being good. The thing I love about the meals Slimming World suggests, is that you don't have to be following the plan to enjoy them. They're made from things you wouldn't think of using but damn, they taste fabulous.
Breakfast - Pancakes
You're probably expecting these to be those yucky banana pancakes that everyone bangs on about but NOPE, you're wrong!
Ingredients:
+ 35g Porridge Oats (HexB if following SW)
+ 1/2 a tub of Muller Light (I use Vanilla)
+ 2 Eggs
+ 2 tbsp Sweetener
+ Frylight
Method:
+ Mix the oats and Muller Light together in a bowl until the mixture has combined and set aside.
+ Whisk the eggs and sweetener together and add it to the oat mixture, then whisk again.
+ Spray your pan with Frylight and place a generous spoonful of the mixture into it the pan. Cook for roughly 3-5 mins of each side.
+ Serve with fruit and your choice of syrup or honey.
Lunch - Egg Muffins
Ingredients:
+ 2 Eggs (1 egg per muffin)
+ Lean Ham
+ Mushrooms
+ Dash of milk
Method:
+ Preheat the oven to 180C, line a muffin tin with cupcake cases and chop up your ingredients.
+ Cook the mushrooms, ham and any other ingredients you want to add.
+ Whisk the eggs and milk together whilst your ingredients are cooking.
+ Once the mushrooms etc. are cooked, spoon the mixture into the cases, then pour the egg on top.
+ Leave to cook in the oven for 20-25 minutes, or until the egg is fully set and golden.
Tea - Sticky Chicken
One of my all time fave teas and the perfect alternative to a Friday night takeaway, although some days I would rather have the takeaway, not gonna lie.
Ingredients:
+ 3 tbsp Honey
+ 3 tbsp Balsamic Vinegar
+ 3 tbsp Soy Sauce
+ Chicken Breasts
Method:
+ Mix the Honey, Balsamic Vinegar and Soy Sauce together. Chop up the chicken breasts, place into the mixture and leave to marinate in the fridge for 30 mins.
+ Add the chicken and marinade to a pan and cook for roughly 20 minutes until almost all the liquid has absorbed.
+ Serve with egg fried rice and veg!
If you managed to read all that then 1) thank you and 2) here's a medal. As the recipes are so simple and adjustable, it's easy to just have fun with them and put in whatever you want. You absolutely have to try the pancakes though so lemme know if you make them, I'd love to hear your thoughts. For all you yoghurt-phobes, they taste nothing like yoghurt, just a heads up.

DeleteThe pancakes! :O My mum's doing Slimming World so she'll definitely be up for trying those with me... We tried banana pancakes. They didn't cook properly and just tasted like mushy banana.
